is the Mantra that motivates local businessman, Saiyam Shah. Known as
Sam, he welcomes customers new and repeat into the Hummus and Pita Co on

As the name implies, the restaurant serves many kinds of house made hummus on plain or whole wheat pita. But Hummus & Pita Co is much much more. Sam’s friendly staff serves up authentic Mediterranean foods prepared daily.
Fresh produce and meats are locally purchased with specialty items that are imported from their source… like giant bags of chickpeas direct from Israel.
Customers order their food in pita, laffa (a soft Middle Eastern flat bread,) in a bowl, on a plate or over greens. The choice for fill-its or toppings is too long to list. Every item looks enticing and very very fresh. Diners are encouraged to try different combinations and can always get a taste before they choose.
Falafels aren’t sitting around getting cold. Not until an order is placed will the balls be shaped and deep fried. Meat and chicken shawarma are shaped in the kitchen with the best quality meat and poultry, seasoned and marinated and then cooked on a traditional spit. A delicious Hummus Shake is full of protein and flavor.

Sam welcomes customers to take a tour of the kitchen if they wish. It is packed with ingredients and spices because everything possible is made on premises. All of the hummus, the shawarma, the salads, the dessert…. Even the new VEGETARIAN SHAWARMA is made from a soy protein developed in Israel but spiced and cooked in the store. And, it is delicious!

Sam came to the US from his native India in 2001 to pursue a masters degree in Engineering from the University of Massachusetts.
After spending many years in the corporate world, he decided to try something else. Taking the lead from his father, a small business owner in India, he invested in an enterprise in Danbury.
He had settled in the area with his wife, Arpi and son, Karm (a form of the word, Karma). The Shahs have found a home away from home in Danbury and hope to spend a good portion their lives here.
